Procedimento:<br />

In una ciotola immersa in una pentola d’acqua calda montate con la frusta i tuorli e lo zucchero, fino a che saranno gonfi e sodi. Togliete dal fuoco.<br />
<br />
Dividete le Girelle praticando un taglio lungo il loro spessore.<br />
Usatene tante quante ne servono per foderare uno stampo da zuccotto (o una ciotola) .<br />
<br />
Quindi montatela panna e aggiungere il mascarpone, mescolatela delicatamente alle uova e zucchero già preparati.<br />
unire la nutella.<br />
rivestire la ciotola prima con la pellicola e poi con le girelle e versare il composto procedendo come un tiramisu ,quindi uno strato di composto e uno di savoiardi (imbevuti nel latte), altro strato di crema e uno di savoiardi fino a chiudere, coprire con la pellicola e riporre la tartaruga in freezer per un’ora e mezza.<br />

Estraetela dal recipiente e guarnitela con i Krumiri per creare le zampe.<br />
tagliare una girella per la testa aggiungere due caramelle per gli occhi.<br />

gli<b><span style="font-size: large;"> ingredienti</span></b> sono per una tortiera di 20 cm di diametro, io l'ho fatta rettangolare.<br />
per 500 gr. <b><span style="font-size: large;">P</span></b><b><span style="font-size: large;">asta frolla:</span></b><br />
250 gr. farina 00<br />
150 gr. burro<br />
100 gr. zucchero a velo<br />
2 tuorli<br />
un pizzico di sale<br />
scorza grattugiata di 1 limone<br />
1/2 bacca di vaniglia<br />

per la<b><span style="font-size: large;"> Crema cotta:</span></b><br />
320 gr. latte intero<br />
160 gr. panna fresca<br />
240 gr. zucchero<br />
145 gr. tuorli (ogni tuorlo pesa circa 20 gr.)<br />
30 gr. fecola<br />

per guarnire:<br />
ananas sciroppato<br />
fragoline<br />
gelatina e zucchero a velo<br />

<b><span style="font-size: large;">Procedimento</span></b> per preparare la crostata alla crema cotta di Luca Montersino<br />
<br />
Comincio con il dire che queste dosi sono un po' più abbondati per la preparazione della crostata alla crema cotta ma la pasta frolla può essere tranquillamente conservata in frigo per un paio di giorni e la crema può essere servita in delle coppette con della frutta e delle briciole di biscotti
è favolosa! ;)<br />
Preparate la frolla seguendo la ricetta tradizionale ma utilizzando gli ingredienti sopra elencati. L'utilizzo dello zucchero a velo e dei tuorli rende questa frolla particolarmente friabile.<br />
Una volta preparata la frolla mettetela in frigo per almeno mezz'ora prima di utilizzarla.<br />
<br />
1)Intanto preparate la crema cotta.<br />
In un pentolino versate la panna e il latte e portate ad ebollizione.<br />
Intanto in una planetaria montate lo zucchero con i tuorli e la fecola fino ad ottenere un composto spumoso<br />
Non appena il latte con la panna comincia a sobbollire abbassate la fiamma e versateci dentro il composto spumoso.<br />
Mescolate con una frusta e fate addensare
ci impiegherà pochissimo, 1 minuto circa.<br />
Non appena la crema si addensa, togliete il pentolino dal fuoco e continuate a mescolare con una frusta per ancora 1 minuto poi versate la crema in una ciotola.<br />
<br />
2)A questo punto ungete ed infarinate la teglia. Stendete la frolla con il matterello e foderateci la teglia.<br />
3)Con un coltello o rondella create il bordo e bucherellatela al fondo.<br />
<br />
4)Disponete sulla frolla dei pezzetti di ananas sciroppato (consiglio di realizzare dei pezzettini piccoli)<br />
<br />
5)Coprite con la crema cotta. Fate sì che la superficie della crema cotta resti irregolare in maniera tale che assuma un colore cangiate in cottura.<br />

6)Infornate in forno preriscaldato a 220 C per 20 minuti.<br />
7)Sfornate e lasciate raffreddare.<br />
Una volta fredda, aprite la cerniera e disponete la crostata su un vassoio.<br />

8)Spennellatela con della gelatina che avrete scaldato un pochino sul fuoco o nel microonde.<br />
<br />
9)Dopodiché decorate con le fragoline oppure con i lamponi come nella ricetta originale.<br />
